I often make my own chicken broth for soups, but seldom vegetable broth, which is actually not complicated, as you describe it, and much better than the tasteless store-bought variety. Thanks, Lolly, for the reminder of how good and comforting a simple homemade broth can be.

Yummy! I was wondering why you can’t find chicken broth easily in the supermarket 😂

Hee hee! I love this! Now you will start making your own!! I’ll post both chicken broth and beef broth next. Beef broth is INSANELY delicious with the pastina. It feels healing 🥰

Not only did this take me back to childhood, it's my GO-TO soup for the kids! I use stelline pasta. And you are SO right about homemade broth!!!

I really enjoyed this and I'm excited to try making with my son this winter. Would be a perfect warm-up following an afternoon of sledding. Thank you!

Yes! Made some last night. I don’t discard anything, just make sure it’s all clean. Add bay leaves, fresh oregano stalk and parmigiana rind for more flavor! Yum! Pastina sounds divine 🙏🏽

Bravissima!! Do you leave the onion paper on too? I took a class once where the chef recommended that (once cleaned as you say)

You're so right, Lolly. There's absolutely no reason not to make homemade broth. I usually make mine with meat (chicken or beef, or both) but the principle's the same. I "cheat" and make mine in an electric pressure cooker. Just throw all the ingredients in, set and forget... A couple of hours later, I have the most delicious broth you can imagine, enough to last me the week.

Yum! I agree 100%! Homemade beef stock in particular with simple rice or pastina is one of our favorites. Much more than with veggie stock. The most delicious broth you can imagine, as you say, Frank!
